Monday's Menu


Another weekend down for the books. How was the cake? Honestly, I’m still stuck on these Spinach Enchiladas. You know, since I have become plant based, cooking and experiencing food have become a whole new ball game for me. I have sincerely come to appreciate (and enjoy) making meals and being a part of what I put into my body, which allows me to be even more aware of what those things do to my body and how I am affected. It’s been a wonderful transition, and a great experience.


So here we are, in a new week, checking off tasks and accomplishing goals like the bosses that we are. It’s our year, and we’re getting it done! With our spirits, in our minds, and through our bodies. It’s great, and I hope this week is a reflection of that <3 span="">
