Thai Vegetable Medley
THAI VEGETABLE MEDLEY
INGREDIENTS

Carrot – 1

Honey – 1 Tbsp
|
Cucumber – 1
|
Apple Cider Vinegar – 2 tsp
|
Red Bell Pepper (or orange) – 1
|
Limes – 2
|
Purple Cabbage – 1 small head
|
Peanut Butter (or preferred nut butter) – ¼ c
|
Cilantro
|
Braggs Amino Acids – 1 Tbsp
|
Zucchini – 1
|
Roasted Red Pepper Flakes – 2 tsp
|
Sesame Seeds
|
Onion Powder – 1 Tbsp
|
Sesame Seed Oil – 1 Tbsp & 2 tsp
|
Garlic Powder – 1 Tbsp
|
DIRECTIONS

Spiralize the carrot, cucumber, and zucchini. Chop the cabbage. Deseed and dice the bell pepper.

Warm Sesame Seed Oil in a pan over medium heat with onion powder, garlic powder, and red pepper. Add the diced bell peppers, stirring well to coat, and sauté until tender.

Zest and juice the limes.

In a food processor, combine peanut butter, apple cider vinegar, Braggs, honey, and lime juice.

Combine spiralized vegetables and bell peppers in a serving bowl. Pour in peanut sauce and toss to coat. Sprinkle with sesame seeds, cilantro, and lime zest
