Veggie Cabbage Soup
VEGGIE CABBAGE SOUP
INGREDIENTS

Cabbage – 1 head

Lemon - 1
|
Onions – 2
|
Cilantro – ½ c
|
Garlic – 6 cloves
|
Vegetable Broth – 6c
|
Zucchini – 1
|
Olive Oil – 3 Tbsp
|
Carrots – 4
|
Cayenne – 1/8 tsp
|
Celery – 3 stalks
|
Black Pepper – ½ tsp
|
Bell Peppers – 3, mixed colors
|
Red Pepper Flakes – ½ tsp
|
Spinach – 3 c
|
Pink Himalayan Salt – 1 tsp

DIRECTIONS

Rinse vegetables. Dice carrots, celery, bell peppers, and cabbage.

Mix dry herbs with olive oil then pour into a large soup pot and place over medium heat.

Dice onions and garlic, keeping separate from other vegetables, and dump into to pot, stirring to coat evenly in spices and oil. Sauté for 5-7 minutes.

Use vegetable peeler to turn zucchini into thin strips.

Add vegetable stock and vegetables, including zucchini and spinach. Bring to a boil for 7-10 minutes, then reduce heat, cover, and let simmer for 20-30 minutes.

Soup is ready when cabbage is tender. Juice the lemon and add to the soup right before serving.
