Lemon Poppy Seed Pancakes
LEMON POPPY SEED PANCAKES
INGREDIENTS

Lemon - 1

Olive Oil - 2 Tbsp
|
Almond Milk - 1 ½ c
|
Vanilla Extract - 1 tsp
|
Oat Flour - 1 ½ c
|
Pink Salt - ½ tsp
|
Maple Syrup - 3 Tbsp
|
Cinnamon - ½ tsp
|
Baking Powder - 2 tsp
|
Poppy Seeds - 2 Tbsp
|
Baking Soda - 1 tsp

DIRECTIONS

Zest and juice lemon. Then pour the juice in with the milk, stir well, and sit to the side.

Whisk lemon zest, flour, syrup, baking powder and soda, salt, and poppy seeds until smooth and creamy

Pour milk and oil into the batter and whisk together, but let lumps remain. Let sit for 5 minutes.

Bring pan to medium heat. If not using a nonstick skillet, add a small amount of oil. Pour in pancake batter and flip when bubbles begin to form.
